Ingredients

For the Crust:

1 cup butter, softened

1 cup powdered sugar

1 teaspoon vanilla extract

2 cups all-purpose flour

For the Filling:

½ cup granulated sugar

3 tablespoons all-purpose flour

Juice and zest of one lemon

3 eggs

2 cups fresh or frozen blueberries

Preparation

Heat oven to 400. Crust: spray 9" square baking dish. In med bowl, use electric mixer on low to beat butter, powdered sugar, and van until fluffy Add flour and beat just until forms small crumbs Press about 2/3 of mixture in bottom of pan. Set aside remainder of mixture. Bake for 12 - 15 min, until lightly browned.

Reduce heat to 350 Filling: Mix sugar, flour, lemon zest & 1/8 tsp salt. Add eggs & lemon juice - whisk til smooth. Spread blueberries over the crust. Pour filling over blueberries Sprinkle reserved crumb mix over top. Bake 30 - 40 min, til topping is golden and filling is puffed

Transfer to wire rack and cool completely before cutting
