Ingredients

-1 and 2/3 cups granulated sugar

-6 egg whites

-1 and 1/2 cups heavy cream

-1 pint blueberries

-1 sprig of mint(chiffonade)

-zest of 2 limes(blanched and candied)

Preparation

-Wash blueberries and pat dry. Toss in 1/3 of sugar. Blend in a food processor, pour blueberry mixture in a stainless steel bowl and chill in the freezer. -Whip the egg whites till frothy, and gradually add the rest of the sugar. whip till the whites reach soft peak. Making a meringue. put meringue into a large stainless steel bowl. -Whip the heavy cream to a stiff peak. -Fold heavy cream, mint, and zest into the meringue. And pour into the chilled container. -Drizzle and swirl in with a spoon chilled blueberry mixture into meringue mixture. Cover and freeze overnight.
