Ingredients
2 tbsp steel cut oats
1 scoop protein powder
1 tbsp flaxseed meal
1 tsp cinnamon
1/2 tsp of baking powder
1/8 tsp salt
1/2 medium banana
1 egg white or 3 tbsp of liquid egg whites
2 tbsp frozen blueberries
Preparation
- Preheat oven to 350 degrees.
- Combine the oats, protein powder, flaxseed meal, cinnamon, baking powder, and salt and mix thoroughly.
- Next add in the banana and egg whites and blend with an immersion blender until smooth.
- Gently fold in the blueberries.
- Grease a muffin tin with canola or olive oil.
- Pour the batter into the muffin tin.
- Bake for 25 to 30 minutes.
