Ingredients

2 tbsp steel cut oats

1 scoop protein powder

1 tbsp flaxseed meal

1 tsp cinnamon

1/2 tsp of baking powder

1/8 tsp salt

1/2 medium banana

1 egg white or 3 tbsp of liquid egg whites

2 tbsp frozen blueberries

Preparation

  1. Preheat oven to 350 degrees.
  2. Combine the oats, protein powder, flaxseed meal, cinnamon, baking powder, and salt and mix thoroughly.
  3. Next add in the banana and egg whites and blend with an immersion blender until smooth.
  4. Gently fold in the blueberries.
  5. Grease a muffin tin with canola or olive oil.
  6. Pour the batter into the muffin tin.
  7. Bake for 25 to 30 minutes.
