Ingredients

1 egg

1/2 cup milk

1/4 cup oil

1 1/2 cups flour

1/2 cup sugar

2 teaspoons baking powder

1/2 teaspoon salt

1 cup blueberries

Topping:

1/2 cup sugar

1/3 cup flour

1/2 teaspoon cinnamon

1/4 cup margarine, softened

Preparation

Preheat oven to 400˚F.

Grease the bottom of muffin cups or use paper liners.

In a large bowl, beat the egg with a fork.

Add the milk and oil, and continue to stir.

Next, add all the dry ingredients (flour, sugar, baking powder, salt).

Mix the batter well, but do not overmix (overmixing makes the muffins tough).

Carefully fold in the blueberries.

In a separate bowl, combine all the ingredients for the topping. Mix with your hands until crumbly.

Fill each muffin cup 2/3 full.

Sprinkle each muffin with about a tablespoon of topping.

Bake at 400˚F for 20 minutes or until the muffins are plump and golden brown.

Serve warm with butter.
