Ingredients
2 1/2 cups flour
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup sugar
1 stick unsalted butter
1/4 cup vegetable oil
2 large eggs
1 1/4 cups buttermilk
2 tsp vanilla extract
1 cup blueberries
1/4 cup Turbinado sugar
Preparation
- Preheat oven to 375 deg F and spray muffin tins with nonstick spray.
- Combine flour, baking powder, baking soda, salt, and sugar in a medium bowl. Set aside.
- Melt butter in a small bowl. Set aside.
- In a large bowl, beat the eggs. Add buttermilk, oil, and vanilla extract.
- Slowly drizzle the melted butter into the buttermilk mixture, stirring constantly.
- Add the dry ingredients into the wet, and mix until just combined.
- Fold in the blueberries.
- Spoon the batter into the muffin tins and sprinkle the tops with Turbinado sugar.
- Bake mini muffins for about 15-17 minutes and the large muffins for 20-25 minutes.
