Ingredients
3 cups plain flour
1 Tbs baking powder
3/4 cup soft brown sugar
4 oz. butter, melted
2 eggs, lightly beaten
1 cup skim milk
1 cup blueberries
Icing/Sugar for sprinkling
Preparation
- Preheat oven to 415 degrees 2)Place muffin sleeves in muffin pan.
- Sift flour and baking powder into a large bowl. Stir in sugar and make a well in the center.
- Add combined melted butter, eggs and milk all at once and stir until just blended. (Do not overmix; batter should look quite lumpy) 5)Fold in blueberries thoroughly but lightly.
- Spoon batter into the prepared tin.
- Sprinkle on sugar, if desired.
- Bake for 20 minutes or until golden brown.
- Transfer to a wire cooling rack and allow to cool.
- Sprinkle with icing, if desired.
