Ingredients

Pastry

1 cup flour

2 tablespoons sugar

1/2 cup butter, softened

1 pinch salt

1 tablespoon vinegar

Filling

1/2 cup sugar

2 tablespoons flour

1 pinch cinnamon

3 cups blueberries, fresh

Preparation

Pastry: Combine flour, salt and sugar. Blend in butter (dough resembles course crumbs). Mix in vinegar. Place in pan and pat down on sides and bottom of 9 inch flan pan (with removable bottom).

Filling: Combine sugar, flour and cinnamon. Add 2 cups of blueberries and coat well. Pour mixture on top of pastry.

Bake at 400 F for 1 hour. Remove from oven and add remaining cup of blueberries and dust with icing sugar.
