Ingredients
2 cups fresh blueberries
1 teaspoon cinnamon
1 teaspoon fresh lemon juice
1 cup flour
3/4 cup sugar
1 teaspoon baking powder
1/2 cup milk
3 tablespoons melted butter
TOPPING
3/4 cup sugar
1 tablespoon cornstarch
1 cup boiling water
Preparation
Toss blueberries, rinsed and sorted, with cinnamon and lemon juice. Place in a greased 8-inch square baking dish. In a mixing bowl, combine flour, sugar and baking powder. Stir in milk and melted butter. Spoon over berries in pan.
For topping, combine sugar and cornstarch very well. Sprinkle over batter. Slowly pour boiling water over all. DO NOT STIR. Bake at 350 degrees for 45 to 50 minutes. Cake will rise to the top and should test done.
