Ingredients
1/2 cup butter - room temp.
1 cup all purpose flour
pinch salt
1 tsp sugar
1 tbsp vinegar
2 pints blueberries
1/3 cup sugar
1 tbsp flour
1 tsp cinnamon
icing sugar for dusting
Preparation
Preheat oven to 375. Make dough. In a medium size bowl combine butter, flour, salt, sugar, mix together, add vinegar and mix together. The dough will be pastey. Press evenly into tart pan. Set aside 1/2 cup blueberries to add after tart is baked. In the same bowl, pour in rinsed blueberries. Gently mix in flour, sugar and cinnamon. Pour berry mixture into tart pan. Bake for 35-40 minutes. Blueberries will be bubbling and dough will be brown at edges. Remove from oven, place fresh blueberries on top of tart for visual and textural contrast. Dust with icing sugar. Allow to cool. Serve at room temperature or cold from the refrigerator.
