Ingredients
1-blue fish-fillet,or a whole one spayed skin side up.
2 or three onions-depending on size.
1 bottle of the driest white wine,preferably Pinot Grigio
butter
tbsp Marjoram or parsley
Preparation
A glass rectangular Pyrex big enough to accommodate the fish.Cover the bottom of the dish with sliced onion,place to fillets on top or the whole fish spayed,skin side up,and cover the top, liberally, with more onion.Enough wine to almost cover,then cover with foil and refrigerate over night. Preheat the oven to 415 degrees,apply butter across the top,and sprinkle with your choice of herb,either fresh or dried.Place on the highest shelf placement and bake for approximately 40 min.This will taste like a mild fish.
