Ingredients
2 cups spelt flour
1 Tablespoon baking soda
1/2 teaspoon salt
2 Tablespoons barley malt syrup
3/8 cup vegetable oil
1 cup fat free yogurt less 2 Tablespoons
3/4 cup skim milk
1 cup mashed bananas
1/2 cup chopped pecans
2 egg whites plus one egg
Preparation
Beat egg whites till frothy then add egg and beat till fluffy. Add milk and yogurt and beat some more. Add barley malt and mix. Mix all dry ingredients in bowl then fold in wet ingredients and add bananas and pecans while folding. Be careful to not overfill waffle iron, using heat resistant spatula to spread batter. Cook on setting 3 ( medium) heat.
