Ingredients
Chorizo 25g, sliced, chopped
1 ½ yellow/red pepper, diced
2 scallions, chopped
1 cup (150g) mixed rice (long grain / wild / camargue)
1lb (450 g) ground beef
1 tbsp cajun seasoning or essence
3 oz chicken livers, chopped fine
3 stalks celery, chopped
1 bouquet parsley, chopped
½ can/bottle beer
2 cups beef broth
Preparation
heat cooking oil in a 4-qt saucepan. Add scallion, peppers, and celery. Braise until soft, 1-2 , minutes, stirring occasionally.
Add ground beef and chorizo, brown the meat, stirring occasionally
Add beer, cook down
Add rice, Cajun seasoning and parsley, stir, cook one minute Add broth, black pepper, cook until liquid absorbed, ca 20 minutes
