Ingredients

½ c. vegetable oil

½ c. honey

¾ c. buttermilk

2 large eggs

1 Tbs. orange zest (use a microplane, and do not remove the white under the peel, which is bitter)

Blend the oil and honey well, then add the remaining wet ingredients.

Add in:

1 c. grated carrots

1 c. raisins

In a separate bowl mix together:

2 1/4 c. flour

1 Tbs. baking powder

½ tsp. salt

½ tsp cinnamon

¼ tsp. nutmeg

¼ c. wheat bran

Preparation

Mix the wet ingredients with the dry just until they are blended. Prepare 12 small muffin cups with liners (I also spray lightly with a non-stick spray), and scoop mixture into the cups. Bake at 375 for about 30 minutes.
