Ingredients

2 lbs boneless chicken, cut into pieces

2 onions, chopped

2 garlic cloves, crushed

Oil, for sauteing

1 12-ou can diced tomatoes

1 c dried apricots, chopped

1/2 c slivered almonds

2 bananas, sliced

1 Granny Smith apple,cored & chopped

Handful of dried cranberries (optional)

1 tbsp curry paste

Preparation

Cut chicken into bite-size pieces & saute w/onion & garlic until onion is translucent & chicken is lightly browned. Add remaining ingredients & simmer til cooked, abt 12 min. Serve w/couscous (I used whole-wheat)& side dishes of chutney, plain low/nonfat yogurt, & dried coconut (optional).
