Ingredients

2 cups water

3 cups sugar

1 tsp bicarb soda

250g butter

8 Tbs cocoa powder

4 eggs, lightly beaten

3 cups self raising flour

Optional icing:

2 cups icing sugar

60g butter

3 Tbs cocoa powder

Milk

Preparation

  1. Heat water, sugar, bicarb soda, butter and cocoa powder in a large saucepan. Stir, brining to the boill, and then simmer 7 minutes
  2. Pre-heat oven to 180C
  3. Cool mixture for half an hour
  4. Mix in the eggs
  5. Mix in the flour
  6. Cook in a greased, lined tin for 50-60 minutes

Icing: mix icing sugar, butter and cocoa and add milk to get a smooth consistency
