Ingredients

2 cups Self Raising Flour

1 cup Irish tea (Chilled)

1 cup Dried Fruit

1 cup Mixed Spice

1 cup Granulated Sugar

1/4 cup Cherries

2 oz Margarine

1 Egg (Beaten)

Preparation

  1. Put the sugar, tea and fruit into a saucepan over a steady heat.
  2. Bring to the boil and let it simmer for about 3 minutes.
  3. When boiled, lift off the heat and set aside to cool.
  4. Once lukewarm add the egg and sieve in the flour.
  5. Mix the ingredients well and spoon into a 2 lb loaf tin.
  6. Bake for 1 1/4 hours at 350°F.
  7. Turn out onto a wire rack to cool.
  8. Served best with a plenty of butter!
