Ingredients

2 bunches of bok choy

2-3 bunches of green onions

1/2 c melted butter

4 pkgs Ramon noodles broken into pieces (toss out the seasoning)

1/2 c sunflower seeds

1/2 c almond slices

1 c oil

1/2 c sugar

1/4 c vinegar

2 T soy sauce

Preparation

Part 1 Cut bok choy and green onions into eatable pieces (stems and leaves). Set aside.

Part 2 In a pan melt 1/2 c butter and then lightly brown the ramon noodles, sunflower seeds and almond slices. Allow to cool before adding to the bok choy and green onions.

Part3 Dissolve vinegar, soy sauce and sugar in a bowl and then add the oil. By adding the oil last it helps the sugar dissolve better.

Mix all ingredients together prior to serving to keep the noodles, sunflower seeds and almond slices fresh and crunchy. If needed all the ingredients could be prepared a day in advance, just keep all of them separate until ready to serve.
