Ingredients

1 stick plus 2 T Butter

10 Tablespoons Olive Oil

5 medium onions, finely chopped

5 medium carrots, finely chopped5

5 stalks celery, finely chopped

8oz diced mushrooms

1 and ¼ lbs. pancetta or unsalted bacon, finely chopped

3 and 3/4lbs. Minced beef, pork or veal, or a mixture

1 and 1/2 bottle dry red wine

Salt and pepper

10 oz tomato paste

5 cups beef stock

3 and ¼ cup double cream

Preparation

Heat the butter and oil in a deep saucepan, add vegetables and fry until they soften and brown lightly. Add the pancetta and minced meat and fry until the meat changes color. Moisten with wine, simmer until it evaporates, then add seasoning, tomato paste and a little stock. Cook slowly, covered, stirring occasionally and gradually adding in all the stock.

After 1 ½ hours, stir in cream and cook 7uncovered until reduced. Serve with tagliatelle pasta.
