Ingredients
1/2 cup mango chutney
1 cup soy sauce
1 cup honey
1 t. ground ginger; dried or fresh
1 t. lemon rind
2 T. lemon juice
1/4 t. Tabasco
3 1/2 lb. chicken, quartered
Preparation
Blend chutney, honey, soy sauce, ginger, lemon rind and juice, and Tabasco in blender until smooth. Pour over chicken and marinate, covered and chilled, for 6 hours or overnight. Arrange chicken on well-buttered rack and roast in 375 oven, basting 4 times with reserved marinade for 45 minutes to one hour.
Serve on bed of watercress.
