Ingredients
l lb chicken breasts
SAUCE
1 in ginger
1 garlic
2 T tahini
1 T sesame oil
1 t sugar
2 1/2 t chili oil
4 t soya
1/2 t roasted and ground Sichuan peppercorns.
ALSO
1 gr onion
1/8 slice ginger
1 stalk celery, diced
1 1/2 oz cilantro inc. stalks
Preparation
Combine sauce ingred. and mix well.’ Cut chicken into strips. Cover with water, add scallions, ginger and salt. Bring to boil, then simmer gently til done - it’s v quick. Remove chicken and rinse under cold water. Reserve 3 T poaching liquid. Pull chicken into long shreds. Mix reserved poaching liquid with tahini. Combine chicken, celery, cilantro and sesame sauce. Garnish with cilantro
