Ingredients

4 3-inch marrow bones

1.5 lbs. ground beef

fleur de sel

freshly ground pepper

Preparation

roast the bones in a roasting pan at 400 degrees for twenty minutes. then, let them come down to room temperature. loosen the marrow with a pairing knife by going around the edge of the marrow at each end of the bone. remove the marrow onto a plate and cover it. place it in the freezer until cold and set. meanwhile, season the beef with a pinch of salt and some pepper. when the marrow is ready, cut each in half (to about 1 inch pieces); then form patties around the marrow. season the burgers with more salt, then grill to desired doneness. bon appetit.
