Ingredients

1 lb. spinach (fresh), or 1 pkg frozen chopped spinach, thawed

1 large container plain yogurt (possibly more, depending on taste)

Salt, pepper, crushed garlic

1 large white onion, chopped

Butter

Preparation

Saute the onion in butter until it’s dark brown and dry. Remove to mixing bowl. Saute the chopped spinach in butter until it’s dry, crumbly (okay if it looks a little burnt). Stir the yogurt into the onions and spinach, add salt, pepper and crushed garlic to taste.   If you are serving this to company, mix things together shortly before serving because the onions turn the mixture brown by the next day (still good to eat, but not as pretty.)   Serve with pita triangles if you don’t have Persian bread.
