Ingredients
2 lbs Borlotti beans with shells
6 cloves garlic, whole
6 plum tomatoes
1/4 cup basil
4 tbsp EVOOO
Pepperoncini or Hot pepper flakes
Salt to taste
Preparation
Shell beans, place in cold water Bring to boil ~5 min, leave beans half cooked Peel garlic Chop tomatoes Wash basil Drizzle 2 tbsp EVOO in saucepan Add garlic, tomatoes, basil, pepperoncini Remove beans from water to saucepan Add 1 cup bean water (enough to cover beans) Set on low heat, stir occasionally Add more water if needed Cook 1.5-2 hours Salt and pepper to taste
