Ingredients
2 lbs. fish fillets, I used salmon
4 Tbsp. Boursin creamy garlic and herb cheese
6 cloves crushed garlic
2 bunches spring onions, chopped
8 cups water
1 lb. small honey gold potatoes, cleaned
1 tsp. sea salt
1/2 tsp. paprika
1/2 tsp. black pepper
1 can diced tomatoes
1/2 cup fresh diced parsley
olive oil
Preparation
Saute garlic and spring onions in 3Tbsp. olive oil until slightly golden. Add the fish, the water, and all other ingred’s except tomatoes and parsley. Cook on medium high 10 minutes, at a good boil. Turn down to simmer, cook for 10 more minutes with lid on. Add tomatoes and parsley, serve with fresh, hot bread.
