Ingredients

1 tablespoon vegetable oil

1 medium onion, thinly sliced

1 teaspoon dried thyme

3 tablespoons bourbon

1/2 cup purchased bourbon sauceze

1 baby back rib, cut into two 5- or 6- rib pieces, or 2 one-inch-thick center-cut loin pork chops

Preparation

Heat oil in heavy medium saucepan over medium-high heat. Add onion and sauté until beginning to soften, about 5 minutes. Add thyme and sauté 1 minute. Add bourbon and simmer until mixture is reduced to glaze, about 1 minute. Mix in barbecue sauce. (Can be prepared 1 day ahead. Cover and chill.)

Prepare barbecue (medium-high heat). Season ribs or chops with salt and pepper; grill 5 minutes per side. Brush with sauce; continue grilling until cooked through, brushing with sauce and turning every 5 minutes, about 15 minutes longer for ribs and 10 minutes longer for chops (total cooking time for ribs will be about 25 minutes; for chops about 20 minutes).

Arrange ribs or chops on plates. Spoon remaining sauce alongside.
