Ingredients
5-6 med sweet potatoes
vegetable oil
1/3 C Curacao
6 T butter
1/4 C Bourbon
1/2 C sugar
1 t cinnamon
1/4 t gr nutmeg
1/8 t gr cloves
1/2 t salt
1/8 t gr wht pepper
Preparation
Scrub sweet potatoes. Dry & rub with vegetable oil. Place in shallow baking pan & bake covered 30 min @350 degrees. Allow to cool peel and cut into 3/4 in slices. In saucepan melt 4 T butter over low heat. Add remaining ingredients & mix. Remove from heat. Butter a 3-4 Qt cassarole dish and add sweet potatoes in 3 layers. Pourig 1/3 of sauce over each layer. Bake covered 30 min @350 degrees. Remove from oven & mix w/wood spoon to breakup. Smooth top dot w/butter. Bake 350 degrees 20 min uncovered.
