Ingredients

1 box of bow tie pasta

1 can of black olives

1 californian cucumber

1 carton of cherry or grape tomatoes

1/4 cup Finely chopped red onion

Chloe’s Vinaigrette:

1 part red wine vinegar

2 parts olive oil

tsp of sugar

tsp of crushed garlic

heaped tsp of dijon mustard

salt & pepper

Preparation

Boil the pasta, drain the water and coat is with some of the vinaigrette to keep it from sticking.

Peel and chop the cumcumber Half the cherry tomatoes Slice the Olives (I get about 3 or 4 slices per olive) Finely chop the red onion, if it’s a very strong one use less then a 1/4 cup

Mix everything into the pasta. Taste it, you’ll probably add more vinaigrette and salt and pepper.
