Ingredients
1 lb plum toms (chopped, 2 cups) OR 1 can diced toms plus container of cherry toms, halved
1/4 c basil, cut in strips
1/4 c olive oil
1/4 c red wine vinegar
5 cloves garlic, minced
1 lb bow tie pasta
ADD to Taste:
Feta
Greek olives
Fresh spinach
Preparation
Cook pasta until al dente, add fresh spinach while pasta still hot, and toss
Mix all other dressing ingred and toss
Add crumbled feta and halved greek olives, if using
