Ingredients
4 lbs. flanken ribs
2 tbsp. flour
salt and freshly ground pepper
2 tbsp. oil
4 cloves garlic
4 small white onions
3 carrots, quartered
1/2 green pepper, sliced
1 cu. dry red wine
Preparation
- Preheat oven to 300"F. Wipe off ribs with paper towels, then sprinkle well with flour, salt, and pepper.
- Heat oil in dutch oven, and first brown garlic, then push aside and brown flanken on all sides.
- Remove from heat, add vegetables, and pour in wine. Cover pan and cook for about 2 1/2 hrs. Baste frequently and add more wine if sauce has evaporated. Serving suggestion: Serve with noodles, broccoli, and a good red wine.
