Ingredients
Beef short ribs, cut in half available at Oliver’s Meat Market for eight people
flour
oil
can of diced or whole tomatoes
1/2 bottle of red wine
one large sliced onion
sprigs of thyme
salt and pepper to taste
chopped parsley, if desired
Preparation
Heat oil in pan. Dip beef short ribs in flour to coat, and then braise in pan. You will be working in batches.
Place ribs on paper towels, until you have finished them all.
Then place the ribs, onion, wine, can of tomatoes and seasonings into a slow cooker. Adjust the liquid to cover the ribs barely, by adding more wine or even beef broth, and cook for about six to eight hours on low.
Serve over polenta with parsley on top, if desired.
