8 chicken breasts
2 tbsp sumflower oil
4tsp lazy garlic
3 chopped shallots
150ml cider or white wine vinegar
2 tbsp honey
100ml dry white wine
200ml chicken stock
2tsp tomato puree
1 tsp wholegrain mustard
Preparation
Method;
* Fry the chicken in the oil in a heavy based saucepan for 6 minutes then transfer onto a plate
* Add the garlic and shallots to the pan and cook for 3 minutes
* Add the vinegar, honey and white wine, then add the stock. Bring to the boil, then return the hicken to the pan and cook for 10 mins.
* Add the puree and mustard, stir and then serve.
