Ingredients

2 4-rib lamb racks

tablespoon vegetable oil

2-3 large potatoes

1 onion

2 carrots

optional: diced tomatoes in their juice

salt

pepper

EITHER (a)oregano or mint in 1 c. water

OR (b) garlic in 1 c. orange juice

Preparation

Ahead of time, cut potatoes, onions, and any other vegetables desires into small pieces.

In a large pot, saute lamb chops briefly in oil. (Or separately in a frying pan, then change to big pot for baking.) Add salt, pepper, and either spices (a) or (b).

Put cut-up vegetables around & on the chops. Cover tightly and bake at 350 F for 40 minutes. Check to see the vegetables are done – potatoes and carrots usually take the longest.
