Ingredients

4 lamb shanks

2 ribs of celery

1 carrot

1 onion

3-4 cloves of garlic

2 TBS of tomato paste

2 TBS of honey

1 bottle of medium bodied red wine

Beef stock

Olive Oil

Salt and pepper

Preparation

*Put olive oil into a pan on medium. Season lamb shank and sear on all sides. Remove from pan.

*Dice all vegetables and add to pan. Sauté until soft then add all ingredients to the pan. Add enough stock until the shanks are covered.

*Bring to a boil and the reduce heat to a simmer. Simmer until lamb shanks are perfectly tender.

Serve with polenta and roasted broccoli.
