Ingredients
2 lamb shanks
garlic, fresh giner,
star anise
1/2 cup diced carrots
1/2 cup sliced onions
1 cup chicken broth or white wine
Handful of barley
cooking oil
Preparation
In a heavy pot, brown lamb shanks in some oil. Remove lamb. add onions, carrots, garlic (last) gently saute’ aromatics and carrots till soft. Add wine/or broth. 2 star anise, barley Return the lamb to the pot bring dish to simmer and cover. after an hour, add salt/pepper to taste. continue cooking until meat falls off the bone. Remove bones, and continue simmering until barley is soft. Serve hot with cooked rice.
