Ingredients

3 lbs octopus, cleaned and cut into pieces

1 cup red wine

1 cup olive oil

1/2 cup red vinegar

1/2-3/4 cup water

1 bay leaf

Preparation

Cook octopus in large pot over medium heat until almost all of its water has evaporated. Add remaining ingredients, bring to a boil and then simmer half covered until sauce is reduced and slightly thickened (1-2 hours).

Serve with rice or over pasta.
