Ingredients
Bran Muffins
Mix 3 cups of All Bran cereal with 1 cup of boiling water and set aside.
Cream together 1 ½ cups sugar and 1cup shortening or oil
Add:
2 eggs
2 cups buttermilk
2/3 cup raisins or prunes (optional)
Measure in a separate bowl, 1 teaspoon salt, 2 ½ tsp soda, and 2 ½ cups flour
Preparation
Add flour mixture to creamed mixture, then add All Bran. Mix until well blended.
Grease muffin tins and fill cups 2/3 to ¾ full. Sprinkle sugar on top. Bake at 400 degrees for 18-20 minutes.
