Ingredients
1 cup boiling water
2 1/2 cups sugar
1/2 cup shortening
2 eggs, lightly beaten
2 1/2 cups flour
1 Tbs baking soda
1/2 tsp salt
1 cup All Bran cereal
1/2 cup oatmeal (5 min cook type)
1/2 cup Cracklin’ Oat Bran
1/2 cup Trader Joe’s High Fiber cereal
2 cups buttermilk
Preparation
Preheat oven to 400 degrees F
- Pour 1 cup boiling water on 1 cup All Bran and set aside.
- Cream sugar and shortening.
- Add eggs and mix well.
- Add all remaining ingredients including All Bran and water. Mix well.
- Fill muffin cups 2/3 full.
- Bake in 400 degree F oven for 16 - 20 mins until top puffs up.
