Ingredients
Brandade de Morue
1 pound salt cod, soaked for 2 days in cold water, changed every 4 hours
2 cloves minced garlic
1-2 potatoes, peeled, boil, and riced
1 1/4 cups olive oil
Preparation
Drain salt cod after having soaked it for 2 days. Simmer 15 minutes in whole milk next time-and then mash by hand or in food processor, making sure to remove all bones and skin and reserving milk. Combine minced garlic and potatoes. Whip olive oil into salt cod mash and then combine with potatoes and garlic. Taste for salt and pepper. Before serving, brown under broiler
